Oh, gosh... Bite-sized bliss. If you're looking for something wonderful and easy, these little lemon blossoms are perfect.
Personally, I'm not a huge fan of lemon flavor. It's just okay to me. But these cupcake-like treats are the perfect balance of sweetness and tang. And they taste so real! Lots of lemon flavored desserts taste like a. biting into a real lemon with no sugar, or b. an explosion of fake lemon flavor that makes you want to gag. Not these!
Basically, you mix a cake mix, pudding mix, eggs and oil together, plop them into mini muffin tins and bake them. Then you mix powdered sugar, lemon zest (just grate the peel off a real lemon), some lemon juice, oil and water together, then dip the little cupcakes in that and let them dry. EASY!
It calls for 1/3 cup of lemon juice. I just squeeze as much juice as I can from the lemon and call it good. Less than 1/3 cup works great. And I add milk to the glaze instead of water.
I made these for a couple of parties this weekend, and everybody loved them! And you can never just eat one of them. They're soooo good. :)
In other news, can I tell you how crazy it is to be working on four projects at once? All of which need interviews? Ugh.
Granted, I feel like I'm much better at interviewing than I used to be, which helps. But it's really easy to get overwhelmed by all the talking to people I've gotta do.
But no worries! The holidays are almost here! :) I'm so excited. I love all the lights and smells and happiness of this time of year. The past couple of days, I've been singing "Let It Snow" over and over again. And I don't even like snow that much! :)
And this year, there's a lot less to worry about. First time in, like, seven or eight Christmases, I think. lol. That's a plus.
My little brothers were so worried about this Christmas, because every year on Christmas Eve my siblings and I usually sleep in the basement and watch Polar Express. But this year I'm married, and they're worried I won't do it with them anymore. lol. Maybe I'll let Jeff take the big bed in the guest room so he can get a good night's sleep and I'll hang out with the kids in the big room. Then we'll all go jump on Jeff in the morning. (Heeheehee.)
And another great thing, we're having Thanksgiving dinner at Grandma's house! That hasn't happened in years! She usually goes to my aunt and uncle's in Colorado.
I keep telling myself, I just gotta get to Tuesday and then the magic begins! :)
